Oh Christmas time... my FAVORITE time of year. Our decorations go up early and the baking starts. Holiday baking to share with all is a tradition in our home. We get together with family and bake a TON of Christmas cookies. Cut out cookies are my favorite and most fun to make. The kids love to ice, decorate and of course eat them. Especially since we only make these this time of year. This year I wanted to convert our traditional cut out cookies to a yummy grain-free version. After some experimenting, I finally got it just right. However I wanted to verify they were just as yummy as our traditional ones. So I had my husband take some to work and have his coworkers give them a try. They had no idea they were grain-free. After they tried the cookies, he shared they were actually grain free. Whoa!! Boy were they surprised. They went so far as to say... "These are better that regular cookies." Score!! I think I did it!! Super delicious Grain-Free Lemon Cut Out Cookies! Amazing sweet treat for the holidays!
Holiday Grain-Free Lemon Cut Out Cookies
Ingredients: (makes about 4 dozen)
- 1 cup (2 sticks) salted butter, softened
- 2 cups organic cane sugar
- 2 pastured eggs
- 1 cup organic whole milk sour cream
- 25 drops Lemon Vitality essential oil- find 100% pure essential oils HERE
- 5 cups Otto's Cassava Flour- where to find
- 1 tsp baking soda
- 1/2 tsp salt
Directions:
- Preheat oven to 325.
- Using a stand mixer, beat butter and sugar until light and fluffy.
- Add eggs, beat until combined.
- Add in sour cream and Lemon Vitality essential oil
- In a separate bowl, combine dry ingredients.
- Slowly add dry mixture to cream mixture and mix until a dough ball is formed. Be sure to stop every so often and scrape down the sides of the bowl.
- Chill for a couple hours or over night.
- Next roll out on a floured surface 1/4 to 1/2 inch thick.
- Cut into shapes with cookie cutters.
To make icing:
Ingredients:
- 1/2 cup grass fed butter, softened
- 1 1/4 cup organic powder sugar
- 3 Tbsp milk (we use raw whole milk)
- 2 tsp almond extract
Directions:
- In a mixing bowl. Beat butter until smooth.
- Add powdered sugar. Mix to incorporate a bit.
- Add milk and almond extract.
- Whip until very smooth
- Ice and decorate. We love to use THESE all natural sprinkles for decorating.
