Einkorn Chocolate Chip Zucchini Bread


How many of you love chocolate? Me, me, me!! I am a huge chocolate lover. I love to make sweet treats every now and then for our family. My Einkorn Chocolate Chip Zucchini Bread is ALWAYS requested. I actually stock up on zucchini during the summer, grate and freeze it so I can make this recipe all year long. It is delicious! It only lasts about 2 days in the house. Ha!!


We recently purchased a new home that needs fixing up... by fixing up, I mean a total gut job. Think... "Fixer Upper" the TV show on HGTV. With the help of some family, my husband is doing most of the work himself. He has been working there every chance he gets. So the "nice wife" that I am,  I made him some sweet treats. ;) I made both a loaf of bread and muffins. He loved them! I hope you enjoy them as much as we do!!




Ingredients:

  • 1 cup Young Living Einkorn Flour (Learn to get started with Young Living HERE)
  • 1 Tbsp Saigon Cinnamon (find in bulk HERE)
  • 1/4 tsp Salt
  • 3/4 tsp Baking Soda
  • 3 Tbsp Organic Unsweetened Cocoa Powder (find HERE)
  • 1/4 cup Coconut Oil (find HERE)
  • 1/2 cup Raw Honey (find HERE)
  • 1/4 cup Coconut Sugar (find HERE)
  • 2 eggs
  • 1 Tbsp Vanilla Extract (find HERE)
  • 1/4 cup Organic Sour Cream
  • 1 1/2 cup Grated Zucchini
  • 1/2 cup Enjoy Life Chocolate Chips (find HERE)

Directions:
  1. Preheat oven to 350 degrees. Oil (using coconut oil) and flour a large 9" bread pan or line a muffin pan with muffin liners. 
  2. Whisk flour, cinnamon, baking soda, salt & cocoa powder together in a small bowl and set aside.
  3. In a stand mixer, beat honey, coconut sugar, oil and eggs for 1-2 minutes. Add vanilla extract and sour cream. Continue mixing until incorporated.
  4. Fold in the grated zucchini. Add your dry flour ingredients.
  5. Stir or mix on low to combine.
  6. Lastly add in your chocolate chips.
  7. Pour into a 9" bread pan. Bake for 50-60 minutes. Or 20-25 minutes if using a muffin pan. Check to be sure your bread is done by placing a toothpick in the center. It should come out clean.
  8. Cool for 5-10 minutes.
